Minty Chocolate Chip LEPRECHAUN Cookies - aka GRINCH Cookies {recipe}


If you love anything minty and chocolatey then you'll die over these cookies!
They taste fabulous and leave your breath minty fresh!

Ingredients:

1 pouch of Sugar Cookie Mix   
1/2 c butter, softened

1/2 tsp mint extract

7 drops green food coloring

1 egg













1 pkg Andes mints; chopped  














1 c semisweet chocolate chips














Directions:

Mix the cookie mix, butter, mint extract, 
green food coloring and egg in a bowl.  













Add the Andes Mints and chocolate 
chips.













Stir until well combined.  














Use a Small Scoop {I use the Pampered Chef Small Scoop} to scoop your dough onto a lightly greased cookie sheet.  I put mine about an inch apart.  Bake at 350 for 8-10 minutes.  Let cool and enjoy!


Note ~ I also make these at Christmas time...but they are no longer LEPRECHAUN Cookies at that point...they are then called GRINCH Cookies!
